A Paris-Brest is one of the finest of French pastries. [...] I have been unable to pinpoint the origin of the name in any of the most reliable dictionaries or encyclopedias, but always assumed that it was named for the world renowned train that ran between Paris and Brest and was known as the Paris-Brest.
